Providence is calling a Cook - Dietary (1.0 FTE, Varaible/Rotating) to Providence Seaside Hospital in Seaside, OR
We are seeking a Cook - Dietary that will provide courteous, friendly food service to a variety of user groups including employees, visitors, physicians, and patients. Primary focus will be on preparing hot and cold food items using a variety of prep and production cooking equipment, following scratch recipes and department specifications. This position uses experience and knowledge of proper food handling techniques to prep items used in their area, to serve all food service guests and will be responsible to set up, stock, and clean service areas.
In this position you will have the following responsibilities:
Prep, prepare and produce large quantities of entrées, starches, vegetables, soups, sauces, sandwiches, french fries, specialty features, and salads on a daily basis from a large cycle menu
Serve on-line as appropriate and may be called to batch cook various menu items, anticipating cooking and finishing off lead times for highly fluctuating volumes
Prepare individual plates/orders according to customer preferences, preparing both hot and cold menu selections, and using a variety of different cooking equipment including a range top, oven, steamer, combi-ovens, microwave, gas broiler, grill, fryer, cheese melter, cold prep table, induction burners
Read and follow recipes as directed by department standards
Be able to trouble shoot food and recipe issues when reviewing next day menu
Interpret and anticipate potential problems or errors and work with their immediate supervisor to find appropriate solutions.
Daily and consistently organizes, stocks, labels and dates all stored items
Constantly cleans, sanitizes food areas and equipment including production, service and all appropriate storage areas
Ensure food is stored at proper temperatures and is rotated as per department standards and FIFO principles
Required qualifications for this position includes:
Valid County Health Department Food Handlers Certificate -OR- Serv Safe Certification is at the time of hire
Three (3) years of working in a high volume, full service restaurant or institutional food service facility working in a production cooking capacity
Two (2) years of experience working from scratch recipes and experience prepping and portioning items needed in the production process
Experience working successfully in a team environment to accomplish common goals
Strong interpersonal communication skills in order to communicate with customers and fellow team members
Good writing and reading skills in order to review/understand/follow exacting recipes
Able to prioritize and organize smaller work assignments while still contributing to the major goal or assignment of the day
Preferred qualifications for this position includes:
Diversified cooking experience which includes any combination of the following positions: line/grill/broiler cook, production cook, soup or sauté cook (12-18 month formal culinary education may be substituted for part of this requirement)
Two (2) years of experience assisting with recipe development and the creation of daily specials for all service/meal periods in a large food operation
One (1) year of experience as production 'lead' or experience working in other leadership capacity in a full service restaurant or large institutional food service facility
Experience in a USDA or HACCP production facility
Two (2) years of experience using food production software (i.e. computrition), and ability to update recipes and production methods in the data base
